For weeks I have been walking around in the fields and helping myself to the many apples in the orchards behind our house that are often not picked.
So many wonderful recipes come to mind every year and today I would like to share with you this delicious apple cake, a tart.

Ingredients
130g sugar
3 large eggs
½ cup milk (can also be plant milk)
28 grams (2 tablespoons) unsalted butter melted
125 grams (1 cup) flour
1 teaspoon baking powder
950 grams (2 pounds) of apples such as Honeycrisp, Granny Smith, Fuji or Pink Lady...or whatever is hanging on the trees.
25 grams (¼ cup) sliced almonds, but you can do without.
powdered sugar for serving (optional)
Preheat the oven to 180˚C with the rack in the middle. I used a tart pan for this cake, but a springform pan (well greased) also works well.
In a mixing bowl, mix the sugar and eggs until creamy and light yellow. Mix vigorously with your hands for about 1 to 2 minutes. Then add the milk and melted butter and mix until smooth. Sift the flour and baking powder over the mixture and mix.
Peel the apples, core them and cut them into very thin slices. I like to use my Madoline or a food processor for this (it's quick).
Put the apples in the mixture and mix well. Then pour the mixture into the pan and press it down a little so that it doesn't burn when baking.

Bake on the middle rack for 60 to 65 minutes. The top should be golden brown and a toothpick inserted into the center of the cake should come out clean.
Allow to cool, dust with powdered sugar and enjoy lukewarm or cold.
